Ingredients
8-12 raw skinned chicken leg quarters (though I’ve used different pieces of chicken and it was fine)
2.Hot pasta cooked with a clove of garlic
1 large onion,chopped
2 large garlic cloves, minced
2 tsp dried rosemary or 2 TBSP fresh rosemary
1 tsp dried basil or 2 TBSP fresh basil
1 tsp dried thyme
2 cans of stewed tomatoes
3/4 c ketchup
1/3 c vinegar
1 TBS brown sugar
Preparation
- Sautee onions and herbs in oil.
- Add tomatoes, ketchup, vinegar, and brown sugar.
- Season chicken with garlic, salt, and pepper.
- When pot comes to a boil, add chicken.
- Simmer for 40-50 minutes.
- Thicken with cornstarch if needed.
- Serve over noodles with cheese.
