Ingredients

2 lbs of red potatoes

(optional carrots may be added)

3 springs of fresh rosemary

1 tsp of thyme

1/2 tsp salt

1/2 tsp of pepper

1/2 tsp garlic powder

2 tbs EVO

Preparation

Place rosemary, garlic, thyme, salt and pepper in food processor. Chop until fine. Add EVO. Cut red potatoes into eighths. Rinse potatoes. Place potatoes (and optional carrots) in a bowl and add the mixture. Cover bowl with plastic wrap and toss until potatoes are coated. Spray baking pan with Pam. Spread potatoes on baking pan trying to make one layer. Cook in 425 oven turning every 15 minutes until done(About 45 minutes)
