Ingredients
1 Whole Chicken, cut into 8 pieces, or substitue chicken quarters
1/2 Cup melted butter
1/2 Cup Soy Sauce
1/4 Cup Rosemary, preferably fresh, dried will do
Kosher Salt and fresh ground pepper to taste
Preparation
Marinade - In a small saute pan, wisk together soy sauce into melted butter slowly, at very low heat, add rosemary, wisk for 1 minute, let cool to room temp.
Marinade chicken for 4 - 6 hours in marinade, turning chicken every hour.
Drain and save marinade for basting chicken on the grill.
Salt and pepper chicken lightly prior to grilling.
Grill chicken on low heat until internal temp. is *165, basting every 15 minutes.
Garnish with fresh rosemary.
Serve with cowboy beans and potato salad, or whatever you would like.
