Ingredients
1 rotissiere chicken, pulled apart
3 T capers
6 red potatoes, chopped in fourths
½ bag of fresh spinach
3 T stone ground mustard
3 T olive oil
3 T honey
salt and pepper to taste
Preparation
Bring a large pot of water to boil, add chopped potatoes. Boil for 8 minutes, drain, and fold in fresh spinach in large bowl. Set aside. In a small bowl, whisk together mustard, capers, olive oil and honey. Add pulled chicken to potatoes and spinach and add mustard mixture. Serve hot.
