Ingredients

This is enough rub for two slabs.

1/2c sugar

1T garlic powder

1T onion powder

1t cinnamon

3T Kosher salt

1/2 t ground pepper

2T paprika

1/4t curry powder

1/2t ground ginger

zest of one lemon

zest of one lime

2T ground charcoal

Preparation

mix the above. Rub into the ribs. sprinkle a few drops of SMOKE flavoring on ONE side of the ribs. Wrap in plastic wrap. Massage the meat. Keep in frig for 24 hours. Meat will drain..keep in a dish.

Grill over soaked mesquite chips and baste with your favorite sauce at 180* for five hours.
