Reuben Spirals To Goal

1 sheet frozen puff pastry, defrosted according to package directions

4 Tablespoons Russian Dressing, homemade or prepared (divided use)

4 ounces lean corned beef, finely chopped (divided use)

1/2 cup sauerkraut, drained and patted dry (divided use)

1 Tablespoon black caraway seeds, (divided use)

5 ounces Swiss cheese, finely chopped (divided use)

Preparation

Preheat oven to 375̊ F. Line a large baking sheet(s) with parchment paper.

On a lightly floured surface roll puff pastry to a 14-inch square about 1/8-inch thick (I roll mine between two sheets of parchment paper). Cut pastry in half, lengthwise, making (2) 14 x 7-inch rectangles.

Leaving a 1/4-inch border on all 4 sides spread 2 Tablespoons of dressing over each rectangle. Sprinkle 1/2 of the corned beef over the dressing on each pastry rectangle. Top the corned beef on each pastry with 1/2 of the sauerkraut. Sprinkle 1/2 of the caraway seeds over the sauerkraut on each pastry rectangle. Spread 1/2 of the cheese on each pastry rectangle.

Begin in at a long edge roll each rectangle into a tight roll, pinching seam to seal. Using a very sharp knife slice each roll into 1/2-inch slices. Transfer slices to prepared baking sheet(s) allowing 1-inch between slices.

Bake until slices are cooked through, puffed and golden brown, about 12-15 minutes. (If using two baking sheets rotate them halfway through baking time).

Remove from oven and allow spirals to cool for 10 minutes before serving. Can also be served at room temperature.
