Ingredients

1 Large package vanilla wafers

2 cups pecans

6 tablespoons light corn syrup

4 ounces gold or dark rum

3 cups confectioners sugar

3 tablespoons unsweetened cocoa

extra confectioners for dusting

Preparation

Mix vanilla wafers and pecans in a food processor Add corn syrup and rum Add confectioners sugar and cocoa Place mixture in refrigerator for 3 days, adding a little rum each day On 3rd day, roll into eyeball-sized balls in your hands, then roll in confectioners sugar
