Ingredients
1 whole chicken or 2-3 chicken breasts
2 tbs salt
1 tsp or more of cinnamon, (I just sprinkle until the top of the water is covered)
dash of pepper
2 cups Uncle Ben’s Rice
2 to 4 onions, cut in slivered
1/4 cup butter
1 can chick peas
Preparation
1.Cover chicken with water, add salt,pepper and cinnamon, boil until done. De-bone. 2.In a 4-6qt pan cook onions in butter until limp. 3.Add a layer of drained Chick Peas, a layer of chicken adding more cinnamon, salt & pepper if needed. (I usually don’t). Next add 2 cups rice and 4 cups of chicken broth. Cover with lid and bring to a boil then lower to a simmer cooking until rice is done and water absorbed. 4.Let set for 10 mins then turn upside down on a platter. 5.Enjoy 6.One recipe says you can sub beef or lamb for the chicken…I never have tried this but it sounds good.
