Ingredients

1 day old baguette or ciabatta loaf

12 calamata olives pitted (I usually slice these in half lengthwise)

1/2 red onion thinly sliced

1 cucumber peeled and thinly sliced

2 large tomatoes chopped to bite size -or - 2 cups of cherry tomatoes halved

Chopped fresh basil

Salt and pepper to taste

Asiago and parmesan cheese

Red wine vinegar

Balsamic vinegar

Olive oil.

Preparation

SALAD MIX Place tomatoes in a bowl add salt and pepper to taste and let sit to juice Add cucmbers ,onions ,olives basil toss and let sit Add 4 tbls rwv add 2 tbls bv add 1/2 cup olive oil toss and let sit BREAD Cut baguette into bite size pcs. In frying pan add butter and olive oil and fry pcs of bread to almost toasted.This may take 2 or 3 batches.While frying throw in salt pepper and some parmesan for extra flavor. Let bread cool. Toss into salad mix. Add salt and pepper to taste. Proved some asiago and parmesan for garnish. Buon appetito
