Ingredients

French lentils, .5 cup

Red or peach-colored lentils, .5 cup

Rice, 1 cup

Tomatoes, 3 medium, chopped in larger chunks

Celery, 5 longer ones, chopped in larger chunks

White onion, half of a large one, chopped in larger chunks

Carrots, 4 chopped in larger chunks

Garlic, diced

Water or Veggie Stock or, 5 cups

Olive oil, 2 tableespoons

Salt (to your taste)

Cayenne (to your taste)

Preparation

Cook up the garlic and onions in the olive oil. While that’s happening, stir occasionally and take the time to chop up the carrots, celery, and tomatoes. When the onions are soft throw in the veggies, liquids, salt, and cayenne then bring to a boil. Add the lentils and rice and lower the heat. Cook for at least 35-40 minutes.
