Ingredients

12 new red potatoes

1 egg, beaten

1 pkg. (6 oz.) FRESH TAKE Cheddar Jack & Bacon Recipe Cheese Breadcrumb Mix, mixed together

1 Tbsp. chopped fresh chives

1/2 cup BREAKSTONE’S or KNUDSEN Sour Cream

Preparation

HEAT oven to 375ºF.

PLACE potatoes on rimmed baking sheet sprayed with cooking spray; bake 20 to 25 min. or until tender. Remove from baking sheet.

USE back of spatula to flatten potatoes to 1/2-inch thickness. Brush both sides of each potato with egg, then coat evenly with cheese mixture. Return to baking sheet.

BAKE 15 min. or until crisp and golden brown. Sprinkle with chives. Serve with sour cream.
