4 lg. Onions sliced thickly

2 T oil

1 can chick peas, smaller than soup can but not the tiny one

1 lb. Acorn squash (get butternut squash at trader joe’s, cubed, frozen)

1-2 sweet potatoes or yams (peel and cube)

¼ C sugar

2 tsp. Cinnamon

¼-1/3 C raisins

A few carrots, optional

Preheat oven to 400.

Saute onions until golden (caramelize them)

Use an oblong pyrex dish. Grease bottom, put in chick peas and caramelized onions.

Put rest of veggies on top.

Sprinkle with cinnamon and sugar; drizzle oil on top.

Bake for 25 min., add a little water, cover with foil and cook till veggies are tender. (about another 25 min.)
