Ingredients
4 cups hot mashed sweet potatoes
1/3 cup butter or margarine
2 tbsp sugar
1 tbsp thawed orange juice concentrate
2 eggs, beaten
1/2 cup milk
1/3 cup chopped pecans
1/3 cup flaked coconut
1/3 cup brown sugar
2 tbsp flour
2tbsp butter or margarine, melted
Preparation
Roast washed whole sweet potatoes/yams in the oven for 55 to 60 minutes at 350 degrees or until soft to the touch. Slit the sweet potato open and scoop out the flesh. Mix mashed sweet potatoes with 1/3 cup butter and sugar: (Melt butter if sweet potatoes are not hot).
Beat in orange-juice concentrate. Beat eggs with milk; blend into sweet potatoes. Turn into greased 1 1/2 qt baking dish.
Preheat oven to 325 degrees. Combine pecans, coconut, brown sugar, flour and the 2 tbsp melted butter. Sprinkle over sweet potatoes. Bake uncovered for about 1 hr; watch so topping doesn’t burn. Makes 8 servings.
