Ingredients

2 salmon fillets

Garlic powder

Black Pepper

Juice from half of a Lemon

Cooking spray

Small head of young Romaine Lettuce

Half of a Vidalia Onion

Half of a large Beefsteak Tomato

Half of a Red Bell Pepper, diced

Olive Oil

Lemon Juice

Mustard

Sugar

Garlic Clove

Preparation

Prepare the dressing, using a 1/2 cup of olive oil, Juice from a whole lemon, a teaspoon of mustard, dash of sugar and one crushed garlic clove. I put this in a jar, shook it up and refrigerated it. You may double the recipe and save this dressing for another use.

Heat a large non-stick or iron skillet with the cooking spray.

Wash and season salmon with the garlic powder, black pepper and lemon juice.

Pan fry the salmon fillets until your desired doneness.

Assemble the salad with the Romaine Lettuce, Vidalia onion, Tomato on 2 salad plates.

Let the fish cool a bit, then top the salad with a fillet on each plate.

Sprinkle the diced red pepper over the dish.

Drizzle dressing over all and serve.
