Ingredients

1 prewashed bag of spring greens

1 large/2 small avacados, diced

1 small red onion, sliced

fresh mint, julienned, add to taste

1 cup fresh strawberries, sliced

1 8 oz. feta cheese crumbled

1/2 cp. balsamic vinegar

1/4 cp. olive oil, if desired

2 tsp. sugar

1/4 cp. candied walnuts, rough chopped

salt and pepper to taste

Preparation

Arrange greens in a large salad bowl. Add avacado, red onion, mint, and feta cheese. Macerate the strawberries for about 1 hr. (min. 15 mins.) in sugar and cover with 1/2 of balsamic vinegar. Add macerated strawberries to other ingredients, salt and pepper to taste and toss with olive oil and remaining vinegar. Top with walnuts and chill prior to serving.
