Ingredients

1 c. brown rice

1 c. red kidney beans

2 c. water

3/4 c. coconut milk

2-3 shallots, minced

2 cloves garlic, minced

3 scallions, chopped

2-3 pinches dried thyme

salt and pepper, to taste

Red bell pepper (optional)

Preparation

Cook just as you would a pot of rice, but take 1-1.5 hours to boil down. Garnish with red bell pepper, if desired.
