Ingredients

4 chicken breasts, boneless, skinless, cut into bite-size pieces

3/4 cup seasoned bread crumbs

1/4 cup grated parmesan cheese

1 egg, beaten with a fork

1/2 cup flour

1/4 cup olive oil

Preparation

  1. Rinse the chicken breasts and pat them dry with paper towel. Slice the chicken into bite-size pieces.
  2. Prepare 3 small bowels for a dipping assembly-line. In the first bowl, place flour. In the second bowl, crack the egg and beat it with a fork. In the third bowl, stir the bread crumbs with the parmesan cheese.
  3. Coat each piece of chicken with the contents of each bowl in order and arrange on a plate: first coat with flour, then coat with egg, and finally coat with the bread crumbs - parmesan cheese mixture.
  4. Heat olive oil in a frying pan over medium heat. Add breaded chicken pieces to pan. Flip when color of breading is medium brown (about 3 minutes).
  5. After chicken pieces are cooked through, remove from pan and place on a plate between pieces of paper towel to drain oil.
