Ingredients

1 kg Potatoes (I think that Maris Pipers that have started to get eyes make the best, sweet creamy mash)

10 sage leaves

1 spanish onion (white)

4 tbsp butter

salt and pepper

Preparation

  1. Peel, cut and boil the potatoes in salted water until cooked (about 20 minutes)
  2. Chop the onion, and cook in half the butter on a low heat so it is caramelized, add the sage.
  3. Mash the cooked potato with the other half of the butter until smooth.
  4. Stir in onions and sage mixture.
