Ingredients
1/4 cup pepper jelly
2 tbsp cider vinegar
1 tbsp olive oil
1/8 tsp kosher salt and pepper
8 cups of fresh baby spinach
1/8 cup gorgonzola cheese
1/4 cup roaste pistachios
Preparation
place jelly in glass bowl and microwave for 30 seconds. combine spinach and cheese and drizzle with vinegar mixture, toss well. sprinke with nuts.
