Ingredients
5 tbs. olive oil
3 tbs. sherry vinegar
1 tbs. snipped fresh thyme
1tbs. dijon mustard.
salt and pepper
1 head boston lettuce torn up
2 bunches watercress coarsley chopped
1 sm red onion halved and thinly sliced
1/2 c. coarsely chopped walnuts, toasted
2 oz. goats cheese
Preparation
Combine dressing ingredients in a jar and shake to combine. Combine lettuce, watercress, figs, and onion in a large salad bowl. Dirzzle with dressing to coat top with walnuts and cheese.
