Ingredients

1 cup prepared jasmine rice

1 chicken breast, grilled and diced

1 cup ham steak, grilled and diced

1 cup pork sausage, grilled and diced

1 cup cherry tomatoes, halved

1/2 cup sliced black olives

1/2 cup sliced radishes

1 can artichoke hearts, halved

1 red bell pepper, diced

1 yellow bell pepper, diced

1 green bell pepper, diced

1 bunch scallions, diced

1/2 cup champagne vinegar

1/3 cup good olive oil

1 T good mustard

Preparation

Mix all the vegetables, meats and rice together.

Mix the champagne vinegar and olive oil with the mustard and dress.
