Ingredients

1 C lentils

6 C water

1/4 C olive oil

1/4 C lemon juice

1 C cooked chickpeas

1 C chopped parsley

1 large red pepper, chopped

1 t salt

1/2 t pepper

Preparation

Cook lentils in water until tender-firm, abt 20 min, drain, let cool. add to rest of ingredients.
