Ingredients

6 C. rolled oats (preferably organic)

3 C. hulled sunflower seeds

3 C. sliced almonds

2 C. hulled pumpkin seeds

1 C. light olive oil

1 C. maple syrup

1 Tablespoon vanilla

1 teaspoon almond extract

1 Tablespoon cinnamon

1/3 C. minced crystallized ginger

Preparation

In large bowl mix all ingredients. Spread on 2 rimmed baking sheets. Bake in 325 degree oven for 20 mins, stirring mixture halfway through baking process.
