Ingredients

-4 skinless salmon fillets (about 2cms thick -approx 100g each)

-2 avocado, thinly sliced

-4 slices tasty or cheddar cheese

-lemon juice

-Salt and Pepper (or lemon pepper) to taste

Preparation

§ Preheat the oven to 160ºC. § Line a baking tray with baking paper, and place the salmon on it. § Sprinkle lemon juice over the salmon, and season with salt and pepper. § Cover the salmon with thin slices of avocado. Use lemon juice and seasoning again. § Cover each portion with a slice of cheese. (If making in advance, cover with plastic wrap and refrigerate until required) § Bake in the pre-heated oven for 20 minutes. Remove from the baking tray, using an egg-slicer.

§ (optional extra). If required, serve with a small green salad.
