Ingredients

4 salmon filets, preferably wild salmon

1/4 c. Dijon mustard

2 limes, zested and juiced

2 T. freshly grated ginger

1/4 c. olive oil

1/2 tsp. dill

1/2 c. plain organic yogurt or Kefir

dash Old Bay Seasoning

1/2 c. honey

salt & pepper to taste

Preparation

Spray cooking spray in a baking dish and place the salmon skin-side down. In a medium bowl, combine remaining ingredients with a whisk. Pour over the salmon and cook at 400° for 10-15 minutes, depending on thickness [watch it]. Serve with wild rice and asparagus. Salmon tastes even better if the sauce is allowed to sit on the salmon for about a 1/2 hour prior to cooking.
