Ingredients

2 14 oz. cans Red Salmon

1 egg, beaten

1/4 cup chopped parsley

pinch of salt

2 cups breadcrumbs

1 T Dijon mustard

4 oz. shredded mozzarella cheese

2 T vegetable oil (canola or Smart Balance)

Preparation

Drain and de-bone salmon. Mix together salmon with mustard, egg, parsley, salt and cheese. Form croquettes and coat with breadcrumbs. Cook in oil on LOW for 10 minutes and flip over only when croquettes feel firm or they will fall apart. Cook for 10 min on each side. Drain on paper towel and serve.
