Ingredients

1 and 1/2 lbs salmon fillet (1 inch thick)

1/4 C Honey or Maple Syrup

2T Mustard (dijon preferable)

1T Balsamic or Red Wine Vinegar

1T Cumin

1t Coriander

1t Chili Powder

Preparation

combine honey (or maple syrup), vinegar, cumin, coriander,chili powder in shallow baking dish. Add salmon and turn to coat and cover. Chill for 20 minutes to 1 hour.

Preheat broiler. Broil salmon without turning, unitl opaque (about 5 minutes). Cool. Use fork to break salmon into bites and put into tortilla.
