Ingredients
4 tbsp. butter
1 1/2 lbs. (700 gr.) fresh mushrooms, minced medium-fine
4 large cloves garlic, minced fine
salt & pepper to taste
2 lbs. (1 kg.) fresh salmon fillet
2 tbsp. fresh Italian parsley, minced
Preparation
In a lage, heavy frying pan, melt 3 tbsp. of the butter, add minced mushrooms and garlic and cook over medium-high heat, stirring occasionally, until liquid has evaporated. Season with salt & pepper, to taste.
Butter a baking dish large enough to hold the salmon; lay fish skin-side down on the dish, season lightly with salt and pepper and spread mushroom/garlic mixture over the fish.
Bake in a pre-heated oven at 450F/230C for 10-15 minutes, depending on thickness, to medium-rare. Do not overcook fish. Remove cooked fish from oven and sprinkle with minced parsley. Serve.
