Ingredients

1/4 cup olive oil

1 Tbsp orange juice

juice of 1 lime

dash of tequila

1 1/2 Tbsp white wine(optional)

3 cloves garlic (chopped)

1 small habanero (chopped)

dash sea salt

2 Tbsp cilantro

cherry tomatoes

1 lb salmon filet(s)

Preparation

  1. wisk together all ingredients except tomatoes
  2. pour half of the marinade into ziplock back with fish, place in fridge for 2 hours
  3. place salmon on foil and grill
  4. during grilling, splash with marinade
  5. halfway through grilling, add cherry tomatoes to salmon
  6. optional, after plating, pour marinade over salmon to taste
  7. top with fresh cilantro to taste
