Ingredients

2 eggs

3 Tbsp lemon juice

1 Tsp instant onion flakes (optional)

1 Tbsp butter

salt & pepper

2 - 73/4 oz. salmon or 220 g.(2)

3/4 C milk

2 C bread crumbs

Preparation

Beat eggs until frothy. Add lemon juice & beat again. Add onion, butter, salt & pepper. Mix well. Remove skin & round bones ( I didn’t) from salmon. Mash with juice. Add to egg mixture. Add milk & crumbs. Mix well. Pack into 1 1/2 quart greased casserole. Bake in 350 F oven for 1 hr.
