Ingredients

Portioned salmon fillets.

Cut up broccoli crowns.

Finely chopped jalapeño pepper

Finely chopped garlic

Thinly sliced mango from 2 mangoes

Thinly sliced daikon radish

Thinly sliced ginger

Thinly sliced shallot

Brut champagne (I used Freixenet)

Lime juice of ½ limes

Walnut oil

Sesame seeds

Spices for salmon include: Jamaican curry, turmeric, powered ginger, chinese five spice, lemon grass powder.

Preparation

Preheat oven to 450. Place broccoli and half the daikon on the bottom of roasting pan. Place seasoned salmon portions on the broccoli, and cover with the rest of the ingredients.

Pour 4-6 oz champagne Drizzle two tbsp walnut oil Squeeze the juice of half a lime.

Cover and roast for 20-30 minutes. Serve over rice or with sweet yams.
