Ingredients
1/2 tsp salt
1/2 tsp pepper
Juice from 1/2 of a lime
1 Tbs spicy or dijon mustard
+/- 2 Tbs Olive oil
3 large cherry tomatoes squished
1/3 C chopped onion
1 Jalapeno seeded and scrapped or chopped
Preparation
Mix all ingredients in ziploc bag, add filets. Incorporate marinade onto filets and let sit in refrigerator for an hour or so. Slow grill the filets skin side down only on low heat. Add additional marinade to the top as desired or needed.
