Ingredients
1 Lb fresh skinless salmon fillet
2 T unsalted butter
2 T olive oil
The juice of half a lemon
Salt
Pepper
1 bunch of parsley
Preparation
Season the salmon with salt and pepper. In a medium sized skillet, melt the butter and add the olive oil. When the butter start to get brown, put in the fish and let it cook for five minutes on each side. After it is done, take it out of the pan and add the lemon juice to the remaining oil. Stir well and pour over the salmon. Accompany it with the deep fried parsley.
