Fresh spinach

Salmon filet (2)

Roasted pine nuts

Herbs de provence

Pesto (opt.)

Flavored olive oil

Preparation

Spray glass pan with PAM, then lay spinach leaves in 1/2" thick bed. Drizzle with a little oil and with lemon juice. Place salmon on top, brush lightly with oil and lemon juice, then sprinkle with herbs de provence to make almost a crust. If you wish, add pesto on top of the herbs at this point. Place one or two slices of lemon on top of salmon. Sprinkle whole thing with roasted pine nuts. Bake at 375 for about 20".
