Ingredients
8 oz. spiral, or bow tie pasta, cook, drain
2 C. fully cooked salmon chunks
1 1/2 C. cherry tomatoes, quartered
1 med. cucumber, quartered, sliced
1 small red onion, sliced
1/3 C. fresh lemon or lime juice
1 garlic clove, minced
1/4 tsp. freshly ground pepper
1/2 C. vegetable oil
1 1/2 tsp. dill weed
3/4 tsp. salt
1 head lettuce, torn
Preparation
In a large bowl, toss the pasta, salmon, tomatoes, cucumber and onion. For dressing, combine the oil, lemon or lime juice, dill, garlic, salt and pepper; mix well. Pour over pasta. Cover and chill. Serve over lettuce.
