Ingredients

1 7-3/4 tin sockeye salmon

8 oz. cream cheese (light is fine)

1 tbsp. lemon juice

2 tbsp. minced onion

1 tsp. horseradish

1 tsp. liquid smoke*

1/2 cup finely chopped walnuts

3 tbsp. chopped parsley

*available in supermarkets and specialty stores.

Preparation

Drain and flake salmon, removing bones. Mix with all above ingredients except nuts and parsley.

Form into a log. (Chilling the mixture in the refrigerator or freezer for a bit beforehand facilitates the process.)

Roll in the nuts and parsley.

Serve with crackers.
