Ingredients

6 skewers

1 # Salmon filet

yellow peppers

red peppers

red onion

6 mushrooms

Marinate:

one lemon juiced

one lime juiced

cilantro, roughly chopped

olive oil

1 tsp sugar

2 cloves garlic crushed

Preparation

Soak skewers in warm water 1 hour. Prepare marinate with all ingredients. Cut salmon into 1" cubes. Cut peppers and onion into 1" squares. Alternate vegetables and salmon on the skewers. End with a blanched mushroom cap. Marinate for 1 hour. Grill on a medium high grill for 5 minutes.
