Ingredients

1 (7.5 oz.) can of salmon, drained, bones removed and flaked

3 scallions, white and greens, chopped

1 sm cucumber, seeded and chopped

1/2C dill, chopped

1/3C flay leaf parsley, chopped

Juice of 1/2 lemon

1T canola oil

salt and pepper to taste

Preparation

  1. Mix first five ingredients.
  2. Mix in lemon juice and oil.
  3. Season with salt and pepper.
  4. Let stand 15 minutes before serving on toast, pita bread, etc.
