Ingredients

2 T. grapeseed or other neutral oil

2 shallots, chopped

2 garlic gloves, minced

2 c. chicken broth

1 14-oz can coconut milk

2 sweet potatoes, cubed

2 T. tomato paste

1 T. minced ginger

1 T. garam masala or other curry powder

1 t. ground cumin

1/4 t. chili powder

Salt and pepper

1 lb. skinless salmon, cubed

1 1/2 c. frozen peas

Juice of one lime

Cilantro

Preparation

Heat oil in a large pot. Add shallots and garlic, and heat for two minutes.

Add broth and next 7 ingredients to the pot. Season with salt and pepper. Bring to a boil, and simmer for 20 minutes, or until sweet potatoes are tender.

Stir in salmon, peas and lime juice. Simmer for another 5 minutes. Stir in cilantro just before serving.
