Ingredients

1/2 fennel finely sliced

1 carrot diced

I small salmon trout cut into 3-4 pieces

1/2 onion diced

1Tbsp olive oil

salt

pepper

Preparation

Lightly fry onion in the olive oil. medium sized saucepan. Add boiled water to desired amount, enough to cover the fish one added. Then add the fennel and carrots. Simmer with lid on over a low-medium heat for 15-20minutes. Add the Salmon trout and cooked gently for another 15minutes or until the fish is cooked through. Add salt and pepper to taste.
