Ingredients

4 x 6oz pieces of salmon filet - skin & bones removed (your fish market will be happy to do this for you)

1 cup chopped fresh herbs…such as fresh tarragon, baby dill, basil, Italian parsley, even celery leaves are a good choice

Salt and Freshly ground black pepper, to taste

Lemon wedges for garnish.

Preparation

Preheat oven to 450 degrees.

  1. Prepare 4 large pieces of heavy duty cooking foil.
  2. In the center of each piece of foil sprinkle 1/4 cup of the chopped mixed fresh herbs. Place a Salmon filet on top of the herbs giving each filet a grind or two of fresh black pepper. Bring up sides of foil to tightly crimp all edges of foil together and totally enclose the fish. Repeat for each Salmon filet.
  3. Place Salmon packets on middle rack of preheated oven and bake for 20 minutes. After 20 minutes remove packs. Immediately turn your oven to BROIL and place oven rack 5 to 6 inches away from broiler.
  4. Open foil packs – folding back the sides of the foil to form a shallow little pan for the fish. Return salmon packs to broiler and broil for 5 minutes or until a golden crust has formed on top of each filet.
  5. Remove salmon filets to serving platter or individual plates with spatula and garnish with lemon wedges.

Serve with Rosemary roasted new potatoes, steamed Asparagus, or Broccoli.
