3 - 1 lb. pkgs. chopped frozen spinach

4 chopped shallots

3 T butter

1 C pine nuts

1/2 cup ricotta cheese

Salt and pepper to taste

Pinch of nutmeg

Thaw spinach in a steamer. Squeeze out all excess water from the spinach into a colander.

In a large saucepan, saute the shallots, pinenuts, and butter.

Add the spinach. Cook till somewhat dry.

Add salt, pepper, and nutmeg to taste. Turn off the flame. Add the ricotta cheese; blend well.

Skin the salmon. Place the uncooked salmon on top of the spinach mixture in a 9 x 13 baking pan. Add salt and pepper. Bake at 425 for approx. 20 min. or until done.
