Ingredients
Salmon filet
Sweet Onion
Red Bell Pepper
Salmon rub (or paprika, thyme & brown sugar)
Olive Oil
Capers
Preparation
Lay salmon on a large sheet of aluminum foil.
Drizzle with olive oil (just enough to provide a light coating and pool near the edges of the salmon)
Sprinkle on a light coating of Salmon rub & capers
Cut pepper & onions into 2 inch slices and place loosely on top of salmon
Wrap foil tightly around salmon to seal in steam and cook on grill or in oven.
Cooking length depends on size of salmon. Peel back foil periodically to see when white juices flow from salmon)
