Ingredients
2 shallots, diced
3 tablespoons olive oil
2 cups apple cider
1 cinnamon stick
1 teaspoon orange zest
salt and pepper
4 salmon fillets, about 6 ounces each or 1 large fillet, about 1.5 lbs)
Preparation
Saute the shallot in olive oil, add the apple cider, cinnamon stick, orange zest, and adjust the seasoning with salt and pepper.
Allow this to simmer until it has reduced to about 1 cup in volume.
Place the salmon on a baking pan, baste with cider mixture, and roast in a 350-degree oven for 15 - 20 minutes, basting as necessary.
