Ingredients

4 salmon fillets (approx 5-6 ounces each)

1/2 cup diced red onions

1/2 cup vinegar

2 shallots, minced

3 cloves minced garlic

1 teaspoon minced fresh ginger

1 teaspoon grated orange rind

1/4 teaspoon soy sauce

2 whole cucumbers slice thin (with or without peel)

dash of black pepper

2 teaspoons olive

Preparation

In a large no-stick frying pan over medium heat, combine onions, vinegar, shallots, garlic, ginger, orange rind and soy sauce. While stirring, bring this mixture to a boil and cook for 30 seconds. Remove from the heat. Add the thin slice cucumbers and dash of pepper and set aside. Rub the salmon with the olice oil and broil for four to five minutes per side. Serve topped with the cucumber & onion relish. quick & easy and a meal!!Enjoy!!
