Ingredients

16 oz Green Lentils

Olive Oil

1/2 Onion

2 bottoms of Leeks - chopped

2 t Salt

1 t Pepper

2 t Garlic

1 1/2 cup Celery-chop in processor

1 1/2 cup Carrot-chop in processor

31 oz Chix Stock

2 T Balsamic Vinegar

4 8 oz Salmon Filets

Preparation

  1. Saute onion & leek, add carrots, celery, garlic, salt & pepper.

  2. Stir in lentils and broth and bring to a boil.

  3. Cover & simmer 30 minutes until tender.

  4. Add vinegar.

  5. Meanwhile, season salmon with oil, s&p, brown sugar rubbed in and a little balsamic.

  6. Bake salmon @ 350f for 10-15 min.

  7. Serve salmon over lentils
