Ingredients
Preheat oven to 230 F.
1 cup salt
1 cup white sugar
2 pound salmon fillet, skin on, deboned
Combine salt and sugar in medium sized bowl. Place salmon in a baking dish and cover with sugar and salt. Refrigerate for 45 minutes. Remove from fridge, rinse and pat dry.
2 T maple syrup
4 T olive oil
Place salmon back in clean baking dish and cover with oil and syrup. Marinate at room temperature for 45 minutes. Place salmon in oven for 12-20 minutes. Check the readiness of the fish by peeling the skin away from the fillet.
