Ingredients
1large salmon fillet
1 125ml can chopped black olives
1/4 cup drained & chopped sun-dried tomatoes
3 minced cloves garlic
2 tbsp. melted butter
1 tsp. fresh chopped rosemary
1 tsp. fresh chopped thyme
2 tsp. dijon mustard
1 cup breadcumbs
Preparation
Mix all ingredients together. Place salmon fillet on a greased baking sheet. Spread about 4 tsp. of dijon mustard on the fillet & then add pack the mixture on top of the fillet & bake at 400 degrees until done approx. 20mins. depending on the thickness of the fillet.
