Ingredients

3 large ripe tomatoes

1/2 cup chopped onions

1/2 cup packed chopped cilantro

2 to 4 whole green chiles,

2 to 4 large tomatilos,husked

2 cloves garlic,or to taste

Fresh red jalapeno pepper,as big a piece as you can handle

2 Tb extra virgin olive oil

Salt,white pepper,dried oregano and sugar to taste.

Preparation

The chiles must be seeded and deveined if you are using a food processor or blender combine all the ingredients and process using several quick on-and-off motions so as not to destroy the texture,if you are chopping and mincing everything by hand simply combine ingredients in a bowl.A chunky texture is desired. Adjust seasonings to taste.
